How can I make black and white, while maintaining a certain color of things?

I've seen pictures where everything is white and BLCK, except 4 eyes, a pool and / or flowers. How can I do without Photoshop, but w /: 1. Table 2. Paint Shop Pro 8 3. Google Picasa and Picasa 2 4. Microsoft Office Picture Manager 5. Picture It! 7.0 ????? If none work, can I use that "S free? Using this information thank you very much:))

Corel PhotoPaint, you must create a mask on the area to maintain color: contour with the Contour tool (I think it is a pair of scissors) then click on "Mask" in Toolbar and reverse the mask for the rest of the image darkens and the object is not. Then click the image in the toolbar, select the mode of choose color and grayscale, OK. If this does not cut the masked area, then edit the overview of the gray levels, then glue the colored part of back in.
